Junk Food Makeover: Cocoa Krispie Treat

The Rice Krispie Treat was admittedly the guilty pleasure of my childhood. I wanted to create a treat that my family could enjoy without all of the sugar and corn syrup that are common in marshmallows. This recipe uses Great Lakes Gelatin. It’s gelatin made from grass fed marrow bones, and it’s my favorite superfood because it supports healthy bones, teeth, hair and nails. You can make this recipe with plain puffed rice cereal if you don’t like chocolate!

  • 1 cup water

  • 3 tablespoons plus 1 teaspoons Great Lakes Gelatin

  • 1 teaspoon vanilla extract

  • 1 cup honey

  • 3 cups of chocolate puffed brown rice cereal

Yields: 16

Spray a 9 x 12 inch brownie pan with coconut oil. Set aside.
Whisk half a cup of water and gelatin in a mixer. Set aside. Heat half a cup of water and honey in a sauce pan over medium heat. Bring to a rolling boil for four minutes.
On a slow speed, gradually whisk in the honey mixture. Turn mixer to a high speed and whip for 10 minutes or until fluff with peaks form. Stir in the puffed brown rice cereal. Scrape mixture into a brownie pan. Let rest for 2 hours. Cut into marshmallows. Store in an airtight container.
