Junk Food Makeover: Mint Chip Ice Cream

This week’s Junk Food Makeover is going to help keep you cool this summer. Ah, mint chip ice cream. It’s my favorite flavor and now I’ve created a super health way to indulge. Raw milk is our super food ingredient. It generally comes from a single grass-fed cow, boasts a high amount of fat-soluble vitamins, including A, D, and K2. It’s also a great source for CLA and Omega 3s. Most of my clients who can’t tolerate dairy can easily drink raw milk. I have come to the conclusion that what they are intolerant of are the growth hormones, antibiotics, grain feed, pasteurization, and homogenization. If you’re feeling like an outlaw and have access to raw milk, try it out!

Ingredients:

  • 2 cups raw milk (if you don’t feel like being an outlaw, you can substitute almond milk)

  • 2/3 cup coconut sugar

  • 4 egg yolks

  • pinch of sea salt

  • 1 tablespoon mint leaves, blanched

  • ½ cup chocolate chips

Yield: 4 Servings

Method:

  1. Heat the milk over medium heat.

  2. While milk is heating, whisk together coconut sugar, egg yolks, and sea salt until light and fluffy.

  3. Just before milk comes to a boil, pour half of it into the egg mixture, whisking vigorously.

  4. Pour egg mixture into remaining pot of milk. Using a wooden spoon, continuously make a figure eight with the spoon until mixture begins to thicken.

  5. Remove from heat and place in a blender with mint leaves. Blend at high speed until mixture turns green. Allow mixture to cool in the refrigerator for at least one hour.

  6. Use in a ice cream machine according to directions. Stir in chips at the end.
