Junk Food Makeover: Chocolate Chip Brownies

This week’s junk food makeover is beaming with healthy ingredients that both your body and palate will love. Our favorite highlight ingredient this week is grass fed butter. It’s high in Vitamin A, K2, D, and E. It’s got more carotenes than carrots. It’s about time everyone knows that butter doesn’t make you fat! Be sure to look for grass fed because not all butters are created equal.

Ingredients:

  • 4 eggs

  • 1 ½  cups coconut sugar

  • 8 ounces grass fed butter, melted

  • 1 ¼ cups raw cacao powder

  • ½ cup oat flour

  • ¼ cup golden flax meal

  • pinch sea salt

  • 1 cup chocolate chips

Yields: 12

Method:

  • Preheat oven to 300 degrees.

  • In a mixer, whisk together eggs and coconut sugar at medium speed until light and fluffy. Add butter, mixing well. Add cacao, oat flour, flax meal, and sea salt. Mix until smooth. Stir in chocolate chips.

  • Pour batter into a non-stick 8-inch square brownie pan. Bake for 45 minutes. Let cool and cut into squares.
