Junk Food Makeover: Marshmallows

Can a sweet and soft marshmallow give you stronger hair, nails, and bones? We used Great Lakes Gelatin. It’s our favorite super food ingredient of the summer. You can make this as marshmallows or enjoy it as fluff. Source local honey for this recipe to support your local farmer.

Ingredients:

  • 1 cup water

  • 3 tablespoons and 1 teaspoon Great Lakes Gelatin

  • 1 teaspoon vanilla extract

  • 1 cup honey

Yields: 16

Method:

  1. Spray a 9x12 inch brownie pan with coconut oil. Set aside.

  2. Whisk half a cup of water and gelatin in a mixer. Set aside. Heat half a cup of water and honey in a sauce pan over medium heat. Bring to a rolling boil for four minutes.

  3. On a slow speed, gradually whisk in the honey mixture. Turn mixer to a high speed and whip for 10 minutes or until fluff with peaks form. Scrape mixture into a brownie pan. Let rest for two hours. Cut into marshmallows. Store in an airtight container.
