It’s one of those things that makes total sense, right?
There are caveats. You can’t do this on an electric stove. You need to watch the corn closely, lest an errant kernel catch fire and burn down your kitchen. But short of these things, stovetop grilling may be the best kitchen hack since DIY Choco Tacos. And that’s saying a lot.
All you have to do is strip the golden-hued ears of their green husks (taking care to remove all that pesky, stringy silk) and place them directly on the stove’s grates over high heat. Don’t be alarmed by the popping sound—that’s normal!—but take care to prevent burning by gently turning each cob with tongs as their kernels blacken. When the entire ear is lightly charred, remove it from the heat and allow to cool for about 5 minutes.
The final step? Cover it with flakey queso freso, some chili flakes, and a squeeze of lime juice. Then go to town!
