Violations (Inspector comments):

  • The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility, as evidenced by this non-compliant inspection.

  • Exposed food preparation observed in grill area under dirty ventilation ducts, and subject to potential contamination.

  • Gallon of hot gravy in plastic container was not being cooled in a manner that would allow it to go from 135 degrees Fahrenheit to 70 degrees in two hours and/or from 135 degrees to 41 degrees within 6 hours, after preparation. Prior violation occurred on August 8, 2023.

  • Three-bay sink in restaurant observed with build-up of food residue and not cleaned before use and frequently throughout the day.

  • Assorted food containers on drying shelf in restaurant observed to have food residue and were not clean to sight and touch. (Removed for cleaning.) Wire racks used to fry doughnuts are not cleaned at a frequency to prevent material being transferred to products.

  • Observed clean food equipment and/or utensils in dish area, stored wet in a manner that does not allow for draining and/or drying (wet nesting). (Removed for cleaning.)

  • Accumulation of grease, litter, and debris under equipment in restaurant kitchen.
