Valerie Bertinelli Just Made Drew Barrymore a One-Pot Lasagna, and It's a "Hug in a Bowl"

We just found a quick comforting dinner recipe you’ll want to add to your weekly rotation, thanks to Valerie Bertinelli and Drew Barrymore.

On a recent episode of The Drew Barrymore Show, Bertinelli shared one of her favorite dishes from her new cookbook, Indulge: Delicious and Decadent Dishes to Enjoy and Share. It’s an easy no-bake, one-pan lasagna, and we’re already ready for a forkful at the thought of it.

To make her stovetop lasagna, Bertinelli starts by adding in sausage—she says spicy sausage or mild sausage will work for this—in a high-rimmed pan on medium heat. She pours a jar of marinara sauce into the pan before adding more liquid.

“You’re going to add all of this water,” Bertinelli says while dumping about 4 cups of water into the pan. She adds in her dry noodles as she is “blending” everything together in the same pan. As the pasta cooks and the liquid simmers, it will soak up any excess water, leaving you with a comforting dish that’s almost ready to serve. While you may be side-eyeing this approach, cooking everything in one pot means less dishes, and the starch from the pasta thickens the sauce and helps the sauce cling to the noodles.

When the noodles are al dente, Bertinelli adds medium balls of mozzarella and spoonfuls of ricotta to the pan, mixing the cheese in before ladling the lasagna into bowls for Barrymore and co-host Ross Mathews to try.

After garnishing with chile flakes and basil, Barrymore gives the easy dinner a taste—and is immediately in bliss.

“This is so incredible,” Barrymore raves in a separate clip. “It’s comforting, it’s like a hug in a bowl.”

We’re just as in awe as Barrymore after looking at the final result, and we can’t wait to try Bertinelli’s easy hack ASAP. Not to mention, this dish is packed with protein, so it’s bound to keep you satisfied for the rest of the day (especially if you pair it with one of these veggie side dishes). It reminds us of our highly rated Skillet Lasagna, which is also a weeknight-friendly one-pot meal. We may never bake another lasagna in the oven again.
