These Steamed Blooming Cupcakes Use A GENIUS Hack

Steaming might not be your first thought when it comes to making cupcakes, but hear us out: It’s a method worth trying that kids will be obsessed with. While these cupcakes may look complex, they come together surprisingly fast. A dump-and-stir batter + 15 minutes in a steamer basket = blooming sweet easy treats ready to be topped with sweet maraschino cherries.

To steam these cupcakes, use silicone cupcake molds, which have more structure than cupcake liners. They're available online and can be used in place of liners in your favorite cupcake recipes in the future. After you fill the molds with the batter, spray a butter knife with cooking spray and slice an X into the top of the cupcake to help them bloom.

Arrange the filled silicone molds in a steamer basket set over a large pot of boiling water, leaving about 1" between each to let the steam flow around the entire cupcake. Tip: If you're using a metal steamer basket, you might have to steam them in two batches. With a bamboo steamer basket, you might be able to do the whole batch at once.

Cover and steam until the cupcakes bloom and a toothpick inserted into the center comes out clean, just like it would for baked cupcakes. Let cool, then place a maraschino cherry in the center and enjoy!

Yields: 9

Prep Time: 5 mins

Total Time: 40 mins

Ingredients

  • 1

    large egg

  • 3/4 c.

    (150 g.) granulated sugar

  • 2 c.

    Original Bisquick™ mix

  • 2/3 c.

    whole milk

  • 2 tbsp.

    unsalted butter, melted

  • 2 tsp.

    pure vanilla extract

  • Cooking spray

  • 9

    maraschino cherries, stems removed

Equipment Needed

  • 9

    silicone cupcake molds

Directions

  1. Into a large pot, pour 2" to 3" water and fit with a steamer basket. Bring water to a boil.

  2. In a large bowl, whisk egg and sugar until combined. Add Bisquick, milk, butter, and vanilla and stir until well combined.

  3. Using a 4-oz. scoop, scoop batter into 9 silicone cupcake molds (do not spray molds with cooking spray or cupcakes won’t “bloom”). Spray a paring or butter knife with cooking spray and make an “X” into one of the cups, wiping off knife and spraying between each line until every cup has an “X” on top.

  4. Working in batches, arrange molds in steamer basket, spacing at least 1" apart. Cover pot and steam cupcakes over medium-high heat, adding more water as needed to ensure pot doesn’t dry up, until cupcakes bloom and a tester inserted into the center comes out clean, 12 to 15 minutes. Using tongs, transfer cupcakes to a plate and let cool completely.

  5. Arrange cupcakes on a platter. Place a cherry in the center of each before serving.
