Once the weather warms up, we’re always looking for fun and easy cooling treats to make for the kids…and ourselves. But sometimes ice pops just won’t cut it. So what to make when you want a cold, sweet dessert on a hot day, but don’t feel like spending hours in the kitchen? Leave it to Ree Drummond, author of The Pioneer Woman Cooks—Super Easy!: 120 Shortcut Recipes for Dinners, Desserts, and More, to have the recipe. Not only do her three-ingredient ice cream sandwiches take almost no time at all to put together (not including freezer time), they also can be made using a leftover ingredient from breakfast: cake donuts.

We can’t be the only ones who always have leftovers when we buy a dozen donuts on the weekend. The first one or two are always delicious, but it seems like several linger in the box each time. The Pioneer Woman’s solution is simple: use those leftover donuts to make ice cream sandwiches.

The recipe is exceedingly simple. Cut leftover chocolate cake donuts in half horizontally, then fill them with softened cherry vanilla ice cream. Roll the edges in mini chocolate chips (like Nestle Semi-Sweet Mini Morsels), then let them freeze until firm.

The end result? A sweet, cakey treat, cool and refreshing on hot days, and ready for endless variation. While Drummond calls for chocolate cake donuts and cherry vanilla ice cream, you can truly mix and match just about any donut and ice cream flavors you want. Vanilla cake donuts filled with pistachio ice cream and rolled in white chocolate chips, glazed yeast-raised donuts stuffed with strawberry ice cream and rolled in shredded sweetened coconut — the options are truly endless. Just go with your cravings, or get the kids involved, so they can create their own custom three-ingredient ice cream sandwiches.

Sure, you could always just buy ice cream sandwiches from the store, but not only with they not be as delicious, they also won’t help use up breakfast leftovers. That’s the one-two punch of The Pioneer Woman’s ice cream sandwich recipe that makes it a must-try in our books.
