The Allrecipes Spring issue is out, and with it, a new set of recipes to cook all season long. There are easy dinner fixes, unique ways to use in-season vegetables, spring desserts and even cocktails to enjoy with the longer days.

But one easy and seasonal recipe has received quite the attention so far on our website, and we’re not surprised. It’s called bruschetta chicken, and it was always bound to be a springtime star.

What Is Bruschetta Chicken?

A thing of beauty to say the least. This chicken recipe is made on the grill, which is great timing for the upcoming warm months. The chicken breasts are marinated in olive oil and your favorite packet of dressing mix. Allstar Ashley Berger suggests using dry ranch or Italian salad dressing mix. 

The chicken is topped with a light and fresh tomato-basil salad that makes this recipe a meal. Packed with cherry tomatoes, shallots, capers, red wine vinegar, lemon juice, and basil, this topping adds great seasonal flavor and takes inspiration from the classic Italian bruschetta antipasti.

Finish the dish off with some fresh parmesan and lemon wedges, and you have a new weeknight dinner to add to your routine.

How To Make Bruschetta Chicken

Slice chicken breasts horizontally down the length of the breast to make thin cutlets. For the marinade, combine olive oil and a dry ranch or Italian salad dressing mix in a large zip-top bag. Add the chicken and coat completely before marinating in the fridge for at least 1 hour, or up to 8 hours.

The tomato-basil salad that finishes the grilled chicken is simple to throw together: Just combine tomatoes, shallot, lemon juice, vinegar, basil, garlic, capers, salt, and pepper in a large bowl and let it sit at room temperature for about one hour before serving. 

Finally, remove the chicken from your marinade and grill it until the internal temperature reaches 165 degrees F. Serve the grilled chicken topped with tomato salad, shaved parmesan, and lemon wedges.
