Junk Food Makeover: Pancakes

This winter, start your day off right with some anti-inflammatory superfood pancakes. The adzuki beans, which contains a unique mineral called molybdenum, help you shed extra water weight. Manuka honey, often considered to be the most healing of all honeys, bring a unique almost eucalyptus-like flavor to these pancakes. No need to pile on the syrup, as these pancakes are sweet enough. The pancakes are guaranteed to keep you fuller up to two hours more than traditional white flour pancakes!

  • 3 large eggs

  • 1 tablespoon of coconut water

  • 2 tablespoons of manuka honey

  • ½ teaspoon of cinnamon

  • 1 ½ cup of almond flour

  • ¼ teaspoon of baking soda

  • Pinch of sea salt

  • ½ cup of mashed adzuki bean

  • Coconut oil spray for cooking

Whisk together eggs, coconut water and honey in a large bowl. Add almond flour, cinnamon, baking soda, and sea salt. Mix until thoroughly combined. Stir in mashed adzuki beans. Heat a skillet over medium low heat. Spray with coconut oil. Using a tablespoon or a medium-size ice cream scoop, drop pancakes onto skillet. Once a crisp edge has formed, use a spatula to flip pancakes and continue cooking on the other side, about two minutes. Repeat with the rest of the batter and serve immediately.
