Junk Food Makeover: Tapioca Pudding

Move over, Kozy Shack. Our highlight ingredient is the chia seed. Chias can hold up to 12 times their weight in liquid, helping you feel fuller longer. They are packed with dietary fiber to improve digestion and they are also the perfect cure for constipation. These powerful seeds are also high in omega-3s. Who needs starchy tapioca and refined sugar to snack on when you have this delicious chia seed concoction? Enjoy for breakfast or a snack!

Ingredients:

  • 2 cups coconut milk

  • 1 ½ tablespoons maple syrup

  • ½ teaspoon vanilla extract

  • Pinch of sea salt

  • ½ cup chia seeds

Yields: 4 servings

Method:

  • Whisk together coconut milk, maple syrup, vanilla extract and sea salt in a large mixing bowl.

  • Gradually whisk in chia seeds, making sure that no clumps have formed.

  • Cover mixture with plastic wrap and refrigerate for 2 hours. Top with your favorite raw nuts and berries.
