🍲 WHAT'S COOKING: Passion for food leads creation of Bid D's Soul-B-Q; food truck coming

A passion for cooking and grilling led David Newberry-Yokley on a new direction in life.

He didn't exactly have a plan, but he knew it was time for a change. A friend of his suggested he should do what he loves to do, which is cook.

"That kind of got me started thinking about what I could do," he said.

That ended up being a food business he calls Big D's Soul-B-Q.

The former admissions counselor at the College of Wooster felt a pull toward something new and different, and the folks at Local Roots in Wooster helped opened a different door for Newberry-Yokley.

A couple different offerings each week

He is starting small with a couple of offerings, a chicken and rice meal and a vegetarian version using cauliflower instead of chicken.

He is enjoying being around a community of other foodies.

"On Monday mornings and Wednesdays, I put out meals, small salads, one's a chicken bowl, one's a cauliflower bowl," Newberry-Yokley said. "I put them out and people buy them. It's crazy.

"Last Thursday I put out some chicken nuggies, what my young son calls them when I make them for him," he said. "I also put out some gumbos and greens at the end of the week. My goal is to put out four meals a week, and then eventually start doing some small group lunches."

The chicken bowl features New York City chicken and rice, made up of basmati rice, chicken, lettuce, tomato and cucumber, red onion, distilled and cider vinegar, honey, lemon/lime juice and a blend of spices. It is served with white sauce and red sauce.

Best meal ever had, 'super simple, delicious'

"I had something like this one time when I was in Baltimore, and it was one of the best meals I ever had," Newberry-Yokley said. "It was super simple, delicious, so I started to focus on that for what I was going to do for this food truck. But in the meantime, I had to learn how to cook properly."

He is working out details how to install a grill and other necessary kitchen things to the back of his miniature truck that he believes will be ideal for a food truck, taking his soul-b-q on the road.

He began making his meals available at Local Roots in February and it is going well.

Dave and Carol Ward of Perrysville who are regulars at Local Roots were thrilled to find the soul-b-q offering.

"We like southern-style cooking," Ward said. "David has a mixture of culinary styles that he does a great job with. And if you like spice in your life, you'll love this."
