Man wants to bring Japanese grilled chicken dish to Baton Rouge with new food pop-up

BATON ROUGE, La. (BRPROUD) — A new food concept that focuses on skewered chicken cooked over special charcoal on a specialized yakitori grill will be coming to Baton Rouge in May.

Chef and owner Cody Comeaux said Fire Bird Yakitoriya will be a food pop-up at various bars and breweries around the greater Baton Rouge area.

“Baton Rouge has a ton of Japanese restaurants, but not yakitori.  I want to bring something exotic yet familiar to the Baton Rouge market,” he said.

Comeux said yakitori is made by first butchering the chickens and separating them into all their parts. It is then skewered and ready to be grilled. It’s normally served dipped in tare, a flavorful soy sauce-based sauce that is smoky and sweet, or shio (salt).

Other toppings such as wasabi, sansho, ichimi togarashi, karashi mustard, or yuzu kosho may also be added to give the chicken a different flavor or dimension, Comeaux said.

FBY will have other types of skewers including vegetables, pork and beef. Comeaux said an assortment of small sides will ensure you come home full.

“Yakitori means ‘bird grilled over fire’ so Fire Bird just fits,” he said. “And yakitoriya means a place to eat yakitori.”

He plans to officially start on May 15 and have his first event soon after. Comeaux said FBY can cater parties and other social gatherings.
