When it comes time for St. Patrick's Day, there's nothing I love more than a little Irish cream in my desserts. My obsession is runs so strong, that I even stir the creamy whisky-based liqueur into boxed brownie mix and the frosting, which is how this Irish Cream Brownie dessert recipe came to be. You can use an Irish cream liqueur (like Bailey’s), but to make these non-alcoholic, I opted for an Irish cream coffee creamer. Use whichever you prefer to make these ultimate St. Patrick's Day brownies.

Irish Cream Brownie Recipe

Ingredients

  • 1 box brownie mix for a 13 x 9-inch pan

  • 3 eggs

  • ½ cup (1 stick) butter, melted

  • ¼ cup Irish cream coffee creamer (like International Delight)

For the brownies

  1. Preheat oven to 350°F. Grease a 13 x 9-inch baking dish.

  2. In a bowl, whisk together dry brownie mix, eggs, melted butter and coffee creamer until fully combined. Spread into prepared pan and bake for 25 to 30 minutes. Let brownies cool completely before frosting.

For the frosting

  1. In mixing bowl, beat butter until fluffy. Gradually add powdered sugar. Mix in Irish cream, then add milk to reach desired consistency. Add 1 tsp green food coloring and beat until fully combined.
