Giada De Laurentiis’ Artichoke Risotto Is One of Her ‘Favorite Things to Make’ & It’s Easy To See Why

Risotto may seem like one of those dishes that only professionals could attempt to make. But as long as you’re patient and take your time, it’s not all that complicated. Giada De Laurentiis’ Artichoke Risotto is one that cooks of all skill levels should try because it’s super decadent and packed with so much flavor.

“This is one of my favorite things to make, especially in the springtime,” De Laurentiis said of this recipe in a recent Instagram video. And you’re going to be making this well into summer and fall, too!

De Laurentiis first starts by sauteeing shallots in hot oil for about a minute before adding in a cup of uncooked Arborio rice. And yes, there’s no extra liquid added at this point! “That’s the whole point of risotto is that we’re toasting the rice — well, it’s not the whole point of risotto,” De Laurentiis said. “[But] It gives that toasty flavor and depth.”

Once the rice has started to sizzle and brown, add white wine, wait until it is absorbed, and then add chicken stock a cup at a time to cook the rice, stirring frequently. Wait until the first cup of stock is absorbed before adding the second, and so on. This is a time-consuming process, but the result is totally worth it.

Once the final cup of stock is absorbed, add in your chopped preserved artichokes and some parmesan cheese to really amp up the creaminess of the dish. And when everything is perfectly mixed, you’re ready to eat!
