This reminds me of a chocolate-peanut parfait, the kind we used to get at the local drive-thru. However, made with the benefits of Greek-style yogurt, this version is at the top of the menu when it comes to flavor and nutrition.

I use non-dairy almond milk yogurt but regular dairy yogurt may be used. I first tried stirring in a spoon of natural peanut butter. But I have found that the powdered variety called PB2 Powdered Peanut Butter is even better. It’s easy to incorporate into the yogurt, and also has fewer calories and fat than traditional peanut butter.

The PB2 Powdered Peanut Butter also comes in almond butter form; I’ve noticed two or three different flavors and brands on the market shelves.

Peanut Butter-Yogurt Cups

8 ounces Greek-style plain yogurt (dairy or almond milk)

2 tablespoons PB2 Powdered Peanut Butter

1 teaspoon pure maple syrup or date syrup

2 tablespoons dark chocolate pieces

Chopped peanuts, optional

In a small bowl, whisk together yogurt, peanut butter powder, and syrup until silky smooth.

Spoon into individual serving cups.

Place chocolate in a small microwavable dish and microwave on high for 20 seconds. Remove and stir until completely melted.

Using the back of the spoon spread a portion of chocolate over the top of each serving of yogurt. Cover from edge to edge. Refrigerate until chocolate hardens.

Break the chocolate shell with a spoon and dig in! Makes 2 servings (or 1, if you wish).
