Some for your food, some for your glass: This Dancing Crow sauvignon blanc works in both

Sauvignon blanc continues to be one of the hottest wine grapes on the market today.

Sales of this Bordeaux varietal have risen steadily over the last decade. In fact, in 2022, it was the only grape to see an increase in sales and plantings while almost every other lost ground, according to the 2023 State of the Wine Industry Report.

Even Italy, with all of its wonderful and bountiful white grape varietals, has begun to plant more sauvignon blanc vines.

I knew I wanted to feature a Dancing Crow wine in this column, but I had a difficult time deciding which of the five to highlight. I decided on the organically grown sauvignon blanc, since April 22 is Earth Day, and International Sauvignon Blanc Day is right around the corner on May 6.

This bottle is actually 88% sauvignon blanc with 12% sémillon grapes added to give this wine its irresistible citrus blossom aromas with every swirl in the glass.

There’s much to like about this bottle, and quite frankly, the entire lineup of Dancing Crow wines that I sampled at a recent tasting at Wise Guy’s Lounge & Grill. It's definitely a winery to watch for any wine lover.

Dancing Crow was the first organic vineyard in Lake County, California, which borders Napa County to the north, said Dancing Crows National Sales Director Scott Senner. Local farmers refer to the soil as “devil’s clay,” as it has a rich, dark color. The vines are planted with Château d’Yquem Clone 1 vines that come from the famous Bordeaux vineyard, Senner added. Ooh la la.

I whipped up a few goat cheese crostini topped with microgreens from Manchester Micro Farm in New Franklin. Goat cheese is always a safe bet when serving sauvignon blanc. The medley of sweet pea, tangy radish and broccoli sprouts were fab with this spring sipper. A dab of herbed goat cheese on a cracker will dazzle your guests as well.

I came across an inspiring Food Network recipe from Ina Garten, titled melt-in-your-mouth scallops Provencal, on Instagram. It was super easy and was an amazingly delicious pairing with the sauvignon blanc. The recipe called for ⅓ cup of white wine, so I used the Dancing Crow, since that’s what I was drinking.

When a recipe calls for a white wine, I always use the white wine that I'm drinking, as it helps marry the flavors of the dish with the wine in your glass.
