If you want things even spicier, then you could swap out the sharp cheddar that Yeh stuffs her burger patties with for pepper jack or another spicy cheese. Otherwise, stick to the cheddar. While the burgers cook in a cast iron pan or over the grill, the cheese in the middle of the patties heats up and gets gooey and melty. It also helps prevent the burgers from drying out, so don’t be afraid to get a nice golden-brown crust on the outside of the patties before pulling them off the grill.
