Amish Breakfast Casserole Recipe

Ingredients

  • 6 large eggs, beaten

  • 1 medium white onion, diced

  • 4 cup frozen diced potatoes, thawed

  • 2 cup shredded cheddar cheese

  • 1¼ cup monterey jack cheese

  • 1½ cup large curd cottage cheese

  • 1 lb pork sausage

  • 2 tsp dried parsley

  • salt and pepper

  1. Preheat oven to 350℉.

  2. Grease a 9x13 baking dish.

  3. In a skillet on medium high heat, brown sausage and onion until no longer pink, breaking meat up into small pieces.

  4. Drain well.

  5. In a large bowl whisk eggs.

  6. Add potatoes, 3 cheeses, sausage mixture, salt and pepper.

  7. Mix well.

  8. Transfer to baking dish.

  9. Sprinkle with parsley.

  10. Bake for 40-50 minutes until toothpick in center comes out clean.

  11. Let sit 10 minutes before cutting.
