These Super-Easy Chocolate Macaroons Are Actually Good for You

Vegan, Gluten-Free & Raw Chocolate Macaroons
Makes as many as you get

Okay, this one is super-easy, and if you have that one friend with a bunch of dietary limits and they want something sweet, make these. Everybody will love them. This is also a great recipe to experiment with. Use it as a base and try new flavors, such as orange zest, toasted almond, or freshly grated cinnamon. —Sara

2 cups unsweetened shredded coconut, plus more to roll them in
½ cup coconut oil
½ cup plus 2 tablespoons unsweetened natural cocoa powder
¼ cup honey
1 teaspoon pure vanilla extract
Pinch of kosher salt

Blend all the ingredients in a food processor, mixing them in one at a time, in order.

Roll the mixture into 1-to 2-inch balls, roll the balls around in some more shredded coconut, and refrigerate or freeze them until firm to the touch. Serve cold but not frozen.
