Vanilla Blackberry Mascarpone Cake

Rosie Alyea’s love for making cake started at the age of 16, when she worked her first-ever job. It was at a bakery.

After that, Alyea attended Bonnie Gordon School of Confectionary Arts to study baking and cake design, and she launched a dessert blog called Sweetapolita. You can find her beautiful creations in bookstores soon, too: Her upcoming cookbook, The Sweetapolita Bake Book, will be published in April 2015.

Alyea’s #yahoofoodcakeoftheday is a four-layered vanilla cake with mascarpone whipped cream and blackberry compote. She frosts the outside with a dark black berry and turquoise frosting using a pastel swirl technique. In the end, you have a beautiful, sophisticated cake that grownups and kids will love. (Speaking of kids, Alyea calls her two daughters “cakelets.”)
