Cake of the Day: Speckled Egg Cake

This robin’s egg-inspired cake comes from The Cake Blog’s Carrie Sellman. We featured her peanut butter chocolate buckeye cake in January, but this time around, it’s all about Easter. Spring! Pastel colors! Finally!

It all starts with the eggs, which determine the color scheme. Once that’s in place, Sellman bakes four layers of vanilla cake and frosts them with tinted buttercream icing. But how does the get the speckles?

The process is a bit messy, but also fun. (Isn’t messy always fun?) Sellman dips a clean paint brush into thin molten chocolate and lightly flicks the bristles, splattering specks all over first the cake and then the eggs.

You now have both Sellman’s and our permission to get messy.
