Cake of the Day: Red Velvet Cake with Cream Cheese Frosting

Labor Day is around the corner and what better way to celebrate than with a festive red velvet cake decorated with blue flowers and cream cheese frosting. The dessert comes from Fanny Lam whose other Cakes of the Day you may remember, such as her Hummingbird Cake with Pineapple ‘Flowers’ and her Green Tea Crêpe Cake. This time around, it’s her stunning red velvet that’s got our attention.

“My secret ingredient for this moist, flavorful, classic red velvet cake is that tiny cup of freshly brewed espresso,” says Lam. “It helps lift up the signature red velvet cake taste, and creates the melt-in-your-mouth texture.”

Lam begins by mixing together a batter of eggs, red food coloring, cocoa powder, vanilla, and hot espresso. She bakes the batter in three 5-inch cake pans for 25 minutes and lets them cool. When it comes to icing the cake, she simply pipes thick frosting made of cream cheese and confectioner’s sugar onto each layer and leaves the sides bare for a rustic look. With a simple addition of fresh blue flowers, you have a patriotic dessert that will leave guests begging for seconds this Labor Day weekend.
