Hummingbird Cake with Pineapple 'Flowers'

Today’s cake comes from Fanny Lam and her blog Oh Sweet Day! Lam was raised in Hong Kong but now lives in Vancouver with her husband and two children, Ethan and Maya. She started her career working at a bank and soon realized her passion for baking. We’re glad she did (look at that cake!).

A twist on classic Hummingbird Cake, Lam’s version contains pineapple, bananas, and coconut flakes. She ices each layer with a cream cheese frosting and tops it all with…pineapple “flowers.” Lam bakes thin pineapple slices at a low temperature and then sets them in muffin tins to dry and form into floral shapes. Don’t worry: “Pineapple flowers” may sound difficult, but Lam is a self-taught baker who believes in easy-to-follow recipes. Check out Oh Sweet Day! for her step-by-step tutorial.
