Cake of the Day: Pink Grapefruit Rosemary Cornmeal Cake

Today’s cake is a pretty-in-pink citrus confection that’s sweet and tart from Kylie Antolini and the blog The Baking Bird. You may remember her Lavender Lemon Curd Marbled Cheesecake that we’ve featured before on Yahoo Food. This time around it’s her zesty grapefruit cake that’s pulling us out of the winter slump. Antolini originally adapted the cake from the cookbook, What Katie Ate when she found herself short of an ingredient.

“Since blood oranges were hard to pin down at any of the grocery stores I frequent, I just decided to take a gamble with pink grapefruits. Why not? They’re pink (but not as strong of a color as blood oranges) and definitely pair well with rosemary,” she writes. “I was very pleased with how it turned out. The grapefruit paired extremely well with the cornmeal, rosemary and St. Germain. I made it into my own thing, but I think Katie would approve.”

Now that it’s citrus season, we approve, too! Antolini makes the cake by simply mixing together the key ingredients and bakes it all in a bundt pan. This means no layers, no fuss, and the outcome is a beautiful rustic cake. All that’s left is the icing that she makes by combining together grapefruit juice, confectioners sugar, and the floral liquer St. Germain. She drizzles it over the bundt and the finished product is a bright and elegant dessert you’ll want to eat all winter long.
