Cake of the Day: Lavender Lemon Curd Marbled Cheesecake

Today’s cake is a swirly and tart lemon cheesecake baked by Kylie Antolini of The Baking Bird blog. Originally from Santa Cruz, California, Antolini is now living in Portland where she works as a dental hygienist by day. At night, she experiments in the kitchen and bakes up one-of-a-kind tarts, beautiful pies, and fresh breads. Which brings us to her bright lemon lavender dessert.

“It’s no secret I want to infuse practically everything I can get my hands on with lavender,” she writes. “With lemons being in season, everyone loving lemon in cheesecake, and the fact that lavender and lemon are a wonderful marriage of flavors, I decided to test this out.”

Antolini starts by combining lemon zest and juice with sugar and eggs in a sauce pan and then cooks everything down into a thick curd. She then creates a graham cracker crust on the bottom of a springform pan and fills it with a cheesecake mixture made of ground lavender, Greek yogurt, vanilla, and cream cheese. To create the marble-like design, she spoons the lemon curd over the mixture and runs a knife through it, making yellow and white swirls. It then bakes in the oven and goes right into the fridge for four hours. The finished product? A melt-in-your mouth cheesecake with a fresh, tangy zest in every bite.
