Cake of the Day: Ombré Mango Madness Cake

Today’s bright yellow ombré cake was made by the talented self-taught baker Belinda Lo, also known as The Moonblush Baker. We’ve featured Lo’s work before in our Cake of the Day series; her mouth-watering Boozy Butterscotch Cinnamon Roll Cake was one of May’s most popular. This time she brings summer vibes with a cake that highlights a surprising ingredient — mango.

“Besides the Asian-style mango jelly sponge cake, not many people have used this fruit to make party cakes,” she writes. “Light and tender crumbed mango layers, sandwiched with an intensely flavored mango curd, guarantee that you will not be wondering where the mango is.”

The madness behind this cake is that the tropical fruit is hiding in every component, starting with the batter that Lo infuses with a mango reduction and then bakes into six layers. To assemble, she coats each tier with coconut juice syrup, homemade mango curd, and slices of fresh mango. She repeats this with the remaining layers and ices the outside with different shades of yellow swiss buttercream frosting for an ombré effect. The finished product is a fragrant and flavorful dessert that will send you off to the tropics.
