Cake of the Day: Raw, Vegan Coconut Mango Cheesecake

We could use some tropical vibes today, and Food Lovin’ blogger Denise Renée brings it with mango purée, coconut, and a splash of lime. No, it’s not a cocktail. It’s a cake!

Renée, who’s based in Dusseldorf, Germany, starts with a base of almonds, dates, and oatmeal. For the “cheesecake” filling, she blends cashews, lime juice, and coconut butter. She decorates the top with pale orange swirls of fresh mango and then places the whole thing in the freezer for five hours. No oven required! Once it has set, let it thaw for 15 minutes; then enjoy a slice of cake that will send you off to the islands.
