Cake of the Day: Farmers Market-Inspired Fruit Cake

Nothing celebrates summer like your favorite farmers market “fruits” disguised into little cakes. These colorful treats are easy to make and are guaranteed to be loved by both kids and adults. The recipe comes from Athena Plitchta, a photographer and recipe writer for the design blog A Subtle Revelry. The site is dedicated to creating simple ideas for merrymaking the everyday with crafty, fun food and party ideas which is how Plitchta’s precious desserts came to life.

“I love an individual fruit cake for serving at brunches and showers,” she writes. “Such a sweet way to say – happy anything and welcome in a season of fruit picking [and] sun drenched parties.”

Plitchta creates these simple fruit cakes by baking a sheet of her favorite cake recipe, but if you’re crunched for time, cake mix works fine, too. She then prints out templates of classic fruit shapes and uses a knife to trace out the design on top of the cake. After they’ve been cut out she frosts them with brightly colored icing and transforms them into watermelons, strawberries, and citrus slices.

“I can’t wait to serve this fun collection of fruit cake and watch the kid’s faces as they realize what looks like a watermelon is actually their favorite cake flavor! A birthday party surprise that will not be soon forgotten,” Plitchta says.
