Cake of the Day: Brown Butter Peach Ice Cream Cake

Ripe summer peaches and ice cream come together in a stunning rustic cake from Summer Min of the food blog O&O Eats. As for her relationship with cake, Min recalls an early memory as a child walking and begging her mom to let her carry her own birthday cake. 

“I won. I tripped. I dropped it on the hot August pavement. It was a devastating moment for my younger self as not only had I ruined my birthday cake, but I also got slapped in the face with a lesson in humility on the very day where it’s OK to be unapologetically self centered and arrogant,” Min writes. “And as horrifying as it was at the time, it was character building — a learning experience. Never again would I be so careless with cake.”

That brings us to the successor of that fallen birthday cake. This ice cream cake is made with the ripest stone fruits that summer has to offer. For the base layer, Min bakes a simple brown butter cake in the bottom spring form pan. Once it’s cooled, she spreads a thick layer of homemade peach ice cream on top. The cake chills and firms in the freezer and when it’s ready to serve she adorns it with fresh fruit and berries.
