Cake of the Day: Tiramisu Crunch Ice Cream Cake

Coffee fanatics eat your heart out with this cool mashup of our favorite Italian dessert from Giselle Yeaegi Park of the baking blog The Busy Spatula. When Park’s not busy practicing medicine as a physician, she’s creating delicious meals and desserts in her New York kitchen alongside her kitties Bear and Petey.

“I have to say, this cake ranks as one of the best cakes to come out of my kitchen,” she writes. “It features layers of coffee ice cream sandwiched between coffee syrup-soaked sponge cake, chocolate almond crispies (!!!), and [it] is covered by a blanket of mascarpone whipped cream and adorned with dark chocolate accents and cocoa powder.”

Park says that although there are many components, each part is simple to make. She starts with the base, a vanilla sponge cake that she paints with a strong coffee syrup. Over the vanilla sponge she spreads Häagen-Dazs coffee ice cream and a layer of homemade chocolate-covered Rice Krispies. The steps are repeated until there are six delicious layers that she then chills in the freezer.

While it cools, she creates chocolate accents by smearing melted dark chocolate on parchment paper and allowing it to set in the fridge. The cake comes out and gets a frosting of mascarpone whipped cream. Taking the hardened chocolate smears, she carefully places them around the sides. Dollops of more cream and a dusting of cocoa powder grace the top for a stunning ice cream cake that’s anything but your typical tiramisu.
