Junk Food Makeover: Mac and Cheese

This Cauliflower Mock and Cheese will keep you feeling lean and beautiful. Cauliflower is a great swap out for pasta, as the gluten in pasta can often leave you feeling bloated. We love the addition of turmeric not only to give that color boost of traditional mac and cheese but because it is anti-inflammatory, helping rid the body of excess water. We prefer to use sheep and goat cheese over cow cheese as it is more digestible.

Ingredients:

  • 2 tablespoons avocado oil

  • ½ cup red onion

  • 1 teaspoon minced garlic

  • 1 teaspoon grass fed butter

  • 1 teaspoon thyme, chopped

  • 1 teaspoon turmeric

  • 7 cups cauliflower, small florets

  • sea salt

  • ½ cup Manchego, grated

  • ½ cup goat Gouda, grated

Yields: 4 servings

  1. Preheat oven to 350 degrees.

  2. Heat avocado oil in medium pan. Add onion and garlic. Cook until onions are translucent. Remove from heat.

  3. Add in butter, thyme and turmeric. Stir until butter is melted.

  4. Place cauliflower in a large mixing bowl. Add oil mixture and sea salt. Mix until evenly coated.

  5. Transfer to 2 quart baking dish. Cover evenly with 2 cheeses. 

  6. Cook for 25 minutes. If you would like more color on the cheese, place under broiler for 3-4 minutes.
