Junk Food Makeover: Glazed Chocolate Donuts Recipe

This recipe for glazed chocolate donuts sounds too good to be true, but sometimes you can have it all. These donuts have chia seeds, which hold 12 times their weight in water and help keep you feel fuller longer, as well as fighting any excess inflammation in the body. The dark chocolate helps keep the skin soft and supple. Coconut sugar is low GI, helping keep the bold sugar balanced.

Ingredients:

  • 1/2 cup grass fed butter, room temperature

  • 1/3 cup coconut sugar

  • 3 eggs

  • 1 tablespoon chia seeds

  • 1/4 cup coconut flour

  • 1/4 cup almond meal

  • 1/4 cup raw cacao powder

  • 1/4 teaspoon baking soda

  • pinch sea salt

  • For the glaze:

  • 1/4 cup coconut milk

  • 1 teaspoon maple syrup

Yields: 8 donuts

Method:

  1. Preheat oven to 350 degrees.

  2. Using a food processor or an electric mixer, cream together butter and coconut sugar. Add eggs and chia seeds. Beat until light and fluffy. Add coconut flour, almond meal, cacao powder, baking soda and sea salt. Mix until thoroughly combined.

  3. Fill in nonstick donut molds half way full of batter.

  4. Bake for 15-18 minutes.

  5. Remove from heat, let cool.

  6. In a medium bowl, whisk together coconut milk and maple syrup. Dip donuts half way into glaze. 

  7. Eat or refrigerate for up to 3 days.
