Cooking lobster can be intimidating: not only do the things looks like weird prehistoric sea creatures, but they’re also still alive when you bring them into your kitchen. While I can’t help with the first part (evolution!), I can teach you how to cook lobster fearlessly.

If you’re squeamish, put the critter to sleep by standing it on its head, tucking down the tail, and stroking it. Before you can even crack open Goodnight Moon, the lobster will be in a sleep-like state, and you can drop it into a pot of boiling salted water. If you’re not so squeamish, just stab it in the head right before throwing it in the pot. Either way, you’ll have fresh lobster in just 10 minutes. If you are smart, you’ll time this all with a batch of homemade Cheddar Bay Biscuits coming out of the oven. Be smart.

How to cook a lobster

Fill a large pot with 2 inches of water and enough salt to make it taste like the sea. Bring it to a boil over high heat. Place a 1-pound lobster in the pot and steam for 8 to 10 minutes. Steaming cooks lobster more evenly and doesn’t wash out all the flavor like boiling does. Use tongs to remove the lobster from the pot and place it on a large plate with warm butter.
