Make A Roast Beef Roulade Inspired By ‘The Danish Girl'

If you’re one of the millions of movie buffs that will tune into the 73rd annual Golden Globes on Sunday, you’re going to need some snacks to get you through the more than three-hour awards show, peppered with wise cracks by host Ricky Gervais. Andrew Cavitolo and Bobby Stern run New York-based Riviera Caterers, a 100-year old catering company that throws corporate bashes and private parties for clients and brands including Victoria’s Secret, Nike, and Refinery 29. The duo believe a good Golden Globes bash can be made even glitzier with a few award-themed treats.

Below, they’ve shared a roast beef roulade with onion jam and arugula inspired by “The Danish Girl,” whose stars Eddie Redmayne and Alicia Vikander are nominated for Golden Globes this year.

Roast Beef and "The Danish Girl” Blue Roulade with Onion Jam and Arugula

1 pound store-bought roast beef from the deli counter, pre-sliced (about 16 slices)
½ pound Danish blue cheese such as Danablu
8 ounces baby arugula
salt and pepper
5 medium Spanish onions
12 ounces balsamic vinegar

For the onion jam, peel and dice the onions. Season with salt and pepper and sauté over high heat until brown. De-glaze with balsamic vinegar and continue cooking until all of the vinegar has evaporated and the mixture appears jam-like. Cool and reserve.

To assemble, lay one piece of roast beef on a work surface. Season with salt and pepper. Place a teaspoon of the jam along the short-end of the beef and spread into a 1-inch wide band. Add ½ ounce of the crumbled blue cheese and ½ ounce of arugula on top of the onion jam and roll tightly. Cut the ends off of the roulade and then cut in half. Continue with remaining beef.
