Loaded potato skins are the kind of "eff it, it's Friday" (or Tuesday) appetizer you order without a second thought from a TGI Friday's menu while swilling $4 LITs, and they always seem like a great idea for a get-together-until you've spent two hours carving boiled potatoes into boat-like shapes and are seriously considering canceling the party altogether.

There has to be an easier way, we thought. Turns out, there is. Smashed potatoes, drizzled with just a little olive oil, salt and pepper, have been popular for the past few years, but this takes them to the next level.

After a quick boiling and smashing, top the potatoes with whatever you want. We love a classic sharp cheddar, crumbled bacon and scallions, but you could pretty much treat these like nachos: Love ground beef, salsa and guac? Do it. Craving roasted broccoli and gooey cheese sauce? Go for it. Dying for chocolate sauce, marshmallows and blue cheese? Uhh, you do you. (Though we wouldn't recommend that last one.)

This app's great with antipasto skewers and buffalo roasted cauliflower, or alongside any of these 50 sure-to-get-your-party-started dips, but you could also serve it as a bombastic side to a steak dinner or barbecue chicken.
