Honey-Sesame Bacon Recipe from 'Short Stack'

Honey-Sesame Bacon
Serves 4

In my house, a weekend without bacon is no weekend at all, but even the tastiest things are not exempt from becoming monotonous. Enter honey-sesame bacon: Imbued with the same flavors as takeout Chinese sesame chicken, it injects just the right amount of savory-sweet variation into the bacon circuit. Eat it as is or layer it with ripe tomato slices and lettuce between toasted white bread for a superior BLT.

1 pound thick-cut bacon
½ cup clover honey
Pinch cayenne pepper
1 tablespoon white sesame seeds, divided

Preheat the oven to 400°. Line a rimmed baking sheet with nonstick aluminum foil and arrange the bacon slices in a single layer. Bake until the fat is rendered and the bacon begins to crisp, about 15 minutes.

Meanwhile, in a small saucepan over medium heat, heat the honey, cayenne and half of the sesame seeds until warmed through. Remove the baking sheet from the oven, carefully drain off some of the bacon fat and brush the honey mixture over the bacon slices. Return the bacon to the oven and bake until the glaze is bubbling and the bacon is crisp, 5 to 7 minutes. Sprinkle the remaining sesame seeds over the bacon and transfer to a paper-towel-lined plate, lacquered side up. Serve warm.
