These Grilled Shrimp Foil Packs Are The Perfect Summer Weeknight Dinner

There's nothing more summery than a backyard Louisiana seafood boil. A picnic table lined with newspaper and covered with crawfish is a beautiful thing. But unless you're in New Orleans, the messy, eat-with-your-hands affair isn't so common, which is totally unfair to everyone everywhere else in the world. That's why we came up with these super easy, no backyard-required shrimp boil packets.

Instead filling a gigantic pot filled with 50 pounds-worth of seafood and potatoes, we packed individual foil squares with our favorite fixins-shrimp, red bliss potatoes, andouille sausage, corn, garlic and lots of Old Bay-and threw them on the grill. After just 10 minutes, everything is perfectly cooked and ready to serve straight from the packet.

If you don't have a grill, do not fret. As a New York-apartment dweller, I feel your pain. Luckily, you can bake this recipe in the oven too. Even in a nice air-conditioned setting, you should still serve the seafood boil packets straight from the foil. And it's only fitting to eat it all with your hands.
