One-Pan Lemon Shrimp and Rice with Pesto

Another night, another one-pot dinner, but this one is a summery skillet meal that starts with yellow squash on the stovetop and moves to the oven to cook the rice. The shrimp are nestled on top of the rice a few minutes before the rice finishes cooking and at the table you add store-bought pesto before you dig in.

Cashew-Chicken Kebabs

A chicken dinner that's anything but average, the cashew-curry sauce serves as both the marinade and dip for these chicken thigh skewers. Round out the meal with rice noodles (they cook in no time at all), shaved cucumber and carrots, shredded iceberg lettuce, and chopped cashews.
