If you had to think of quintessential summer desserts, y'all know strawberry shortcake will top the list. The bright flavor of strawberries paired with freshly whipped cream and pound cake is the perfect light way to treat yourself.
We have a twist on the summer fave with this killer shortcake-cheesecake hybrid. It's a plain cheesecake, with crushed pound cake sides and a syrupy strawberry topping. I opted to not put strawberries in the cheesecake itself since I want the cream shortcake layer to be the cheesecake. Also, the delicious strawberry topping is sweet enough that you'll want it with a more neutral cake.
Make this when you want to pull out all the stops. You know cheesecakes take a lot of work, and this one is no exception. But fortunately most of the work happens with the cheesecake. When it's time to do the strawberry topping, you're pretty much done: You just have to simmer strawberries and corn starch on the stovetop until thick and syrupy. That syrup is sweet like candy and gives the cheesecake so much flavor.
