Advised PIC to ensure all TCS items are hot-holding at 135 F or above at all times. Observed drain leaking under the wash bin of the 4-compartment sink.

Inspector Notes: Observed various TCS food items cold-holding in different units above 41 F. (Boiled eggs, ice cream mix, vanilla ice cream mix, chocolate ice cream mix, pork, shrimp, chicken, bean sprouts, ribs, diced ham, noodle, pork, shrimp, chicken). (COS- PIC discarded food items). Observed TCS food items on the hot bar hot-holding below 135 F (ribs, fried chicken, egg foo young, etc.). Observed spoon for white rice stored in 78 F water. (COS- PIC changed utensil water to 200 F.) Advised PIC to ensure in-use utensils are stored in water at 135 F or more at all times. Other methods could include to wash utensil every 4 hours or to ensure to place utensil under a operating dipping well.

Inspector Notes: Observed raw chicken above raw shelled eggs and raw fish in the walk-in cooler. Observed raw fish next to raw shell eggs in the walk in cooler. Observed raw chicken below the grill to be above 41F. Observed tomatoes not prepped today in the prep top cooler to be above 41F.
HOP XING RESTAURANT, 1900 E. VICTORY DRIVE, SAVANNAH, 80
Inspector Notes: Observed multiple employee drinks in dry food storage areas. Observed employee drink without a lid. Observed no soap at handwashing sink in kitchen area. Observed no hand drying supplies at handwashing sink in kitchen area. Observed multiple separation issues with raw shrimp stored next to raw chicken and cooked chicken next to raw shrimp in walk-in cooler. Observed cups used as scoops for rice, sugar, and flour in bulk containers. Observed a live roach walking on the floor in kitchen area. Inquired about facility pest control, PIC stated that facility does their own pest control. Facility must contract a licensed pest control service.
