New restaurant coming to Bellingham as late-night food truck shifts gears

One of Bellingham’s newest food trucks is switching gears and opening a brick-and-mortar restaurant in downtown Bellingham this spring.

Doug’s Burgers, a late-night food truck serving burgers and fries, opened in November 2023 and has quickly grown a following after popping up at local breweries and spots across Whatcom county.

The food truck was launched by Matt King, who named the business after his dog.

“I worked on a few friends’ trucks in Houston and had a pop-up tent for a while. I was going to have my first truck there but wanted to give Bellingham a late-night option after visiting family. I named it after my dog. If everyone visited as hungry as him I would definitely sell out immediately,” King told The Herald for a November 2023 article.

The restaurant will be at 2527 Meridian St. in Bellingham, the previous location of El Rey Latino Restaurant and next-door to Menace Brewing. It is expected to open next month, King said in an email to The Herald.

Doug’s Burgers food truck will also remain open, operating in Ferndale, Birch Bay and Fairhaven. The food truck’s schedule is continually update on Instagram.

King also plans to expand the menu after opening the restaurant.

“We will definitely have some more options but will stick with the crowd favorites for now. Once we are settled in we will start slowly adding items as we have time to perfect them,” King wrote.

An official opening date and operating hours have not yet been set.
