This Margarita Poke Cake Puts All Other Birthday Cakes To Shame

Forget yellow cake with chocolate frosting. For my next birthday, I want this poke cake. And you will too for yours. Why? Because it's boozy to the max. There's tequila in the filling and the frosting, so each bite tastes like a serious fiesta. All other cakes = siestas in comparison.

The cake itself is pretty basic (read: plain vanilla). The fun begins shortly after it's baked and poke when you make the filling - a mixture of sweetened condensed milk, cream, lime juice, and of course, tequila. It almost tastes like a spiked version of key lime pie, which is, in our book, a v. good thing. After pouring the filling over the holes, let the whole cake sit in the fridge for about an hour. You really want the creamy spiked filling to fully infuse the cake.

Once the filling is done, there's the tequila-lime buttercream - my new favorite frosting. It sounds kinda weird, but really it's no stranger than a lemon buttercream. Trust me, if you enjoy a good margarita, you'll love it. Too much. A finishing sprinkle of salt (on top of the frosting) may also sound kind of odd, but again, if you're a marg person, you get it.
