Confession: I haven't been to TGI Friday's since I was eight, and back then, a green bean "fry" would've scared me. But now, after baking my own sheet try worth of crispy breaded string beans, I'm tempted visit the big time chain and order the infamous app myself. Our version is so good, it's hard to imagine them getting any better.

First of all, they're baked ... and not just for the sake of being healthy. (Although that's a major plus.) We made extra sure these fries were super crispy, not sad and limp. The satisfying crunch is achieved by a simple dredging situation. Coat just-washed green beans in flour (the extra moisture from rinsing will help the flour stick), dip them in eggs and toss them in bread crumbs mixed with olive oil. The olive oil is your key to the beautiful shade of golden.

Perhaps most importantly, there's the wasabi ranch. We simplified the restaurant favorite and whisked some finely chopped cucumber, wasabi powder, and vinegar into store-bought ranch. It's a little spicy, really creamy and so good you'll want to drink it right from the bowl. But please don't. Dip your healthy(ish) vegetable fries in it instead.
