'Yellowstone's' Chef Gator Reveals What Kevin Costner Eats On Set

The newest installment of Celebrity Eats is a two-parter, with a chef who cooks for celebrities and is a celebrity himself. Chef Gabriel Guilbeau, who you may know as Yellowstone’s Chef Gator, stopped by the Delish test kitchen to show us how to make some of the cast’s favorite dishes—specifically Pineapple Bourbon Bread Pudding.

Gator spent five years as the head of craft services for director Taylor Sheridan’s film and television projects. But it was on the set of Yellowstone where Gator stepped into the spotlight to play the Dutton family chef.

“I figured I’d be in the background of the show,” Gator says. “I had a camera in front of my face…so I went back to the basics and started making dinner.” Since he was first featured on the hit series, he’s been in 12 episodes—all while feeding the entire cast and crew. In an interview with Delish, Gator revealed that he feeds upwards of 300 people every day.

On the set of Yellowstone and the prequel series 1883, you can expect to find comforting meals like gumbo, étouffée, jambalaya, and plenty of barbecue. But he also tailors his cooking for his fellow cast members. Kevin Costner, who plays John Dutton on the show, is a notoriously picky eater, Gator reveals. “Before he met me, I think [he] solely lived off of canned chili and hot dogs,” he says.

But on a shoot day, you can often find Costner lingering near Gator’s kitchen and looking for a snack. His biggest weakness? Dessert. “Kevin always likes to tell me he’s on a diet and off the sugar, and then he’ll ask me to make him an apple pie,” Gator says. “In the same day, usually.”
