When I first happened upon Hurts Donut's Pickle Donut, I wasn't even surprised -nothing can phase me at this point, guys. Is it weird that my first thought was, "People will LOVE it!"? Because I know how this world works: pickle lovers are their own breed, and they know no bounds, as we've seen by investigating pickle ice cream, Brussels sprouts pickles, and pickle ice pops. Hurts is always pushing the limits with their donut flavors. Sure, they do glazed and sprinkles for purists, but they also do crazy sh*t like Cookie Monster and S'mores.

When I visited the husband-wife team behind the fast-growing donut shops in Springfield, Missouri, I was shocked to learn that they "didn't even make a donut until 12 hours before opening!". Even crazier? They learned how to make their donuts on YouTube (LOL!). Regardless, they're clearly doing something right: In just 4 short years, they now have 16 locations across the Midwest.

Hurts' lead baker Ian Carleton got the idea to do a pickle donut for National Pickle Day last December. The idea went so viral (the internet loves pickles, guys) that they decided to partner with Delish to bring it back for two weeks. The yeast donut gets stuffed with a pickle cheesecake filling, dipped in vanilla icing, sprinkled with dried dill, and then topped with pickle juice cubes (!!!) that are basically the texture of Jell-O.

The whole experience is just a bunch of different textures that make your brain go, "Huh?!" Pickle lovers, you know what to do.
