THE Wine + Sushi Mecca Has Opened In A Beverly Hills Parking Lot

Have you ever had a craving so strong that you followed your nose, jumped in the car, and drove until you ended up somewhere foreign & unfamiliar, yet comfortable? That's how you'll feel en route to the new Sushi Note Omakase. Opened by the industry veterans behind the original Sushi Note location, David Gibbs (Augustine Wine Bar & Mirabelle) and Andy Paxson (Melanie) took parking lot dining to a whole new level! Tucked away inside the Rodeo Drive parking lot for the Rodeo Collection, the 14 seat omakase sushi spot will wow diners with the rotating menu of premium, imported Japanese market fish paired with rare wine selections from around the world. The restaurant is helmed by celebrated head chef Kiminobu Saito, his long-time mentee Earl Aguilar, with Beverage Director Ian Lokey crafting the wine program. Omakase comes in just below $200 for a twenty course, two-hour experience and two wine pairing options: $100 for the daily wine pairing, or $150 for the reserve pairing with vintage wines. REFINED, SEASONAL OMAKASE EXPERIENCES

Sushi Note’s world-class omakase offering melds premium, imported Japanese market fish with both cutting edge and traditional sushi preparation techniques mastered by Chef Saito. Each evening, the menu will showcase the finest, seasonal fish and ingredients available from overseas to create superior, carefully prepared nigiri and sashimi dishes. Guests can experience Chef Saito’s sophisticated, inventive craftmanship through a two-hour journey offering twenty courses of an expertly curated lineup of fresh sushi, handroll and dessert ($190) and can opt in for the wine pairing ($100) or reserve wine pairing ($150) for an all-encompassing culinary excursion. For those in search of an abbreviated omakase experience, Sushi Note Omakase also offers a twelve course, one-hour omakase menu ($125) from 4-5 p.m.

To complement the omakase, guests can choose either a Wine Pairing or Reserve Wine Pairing. Both pairings include wines hand selected by Lokey, who has built an impressive collection ranging from familiar labels to some of the most prestigious in the world. Highlights include Domaine Marcel Deiss’ Alsace Grand Cru Blanc ‘Schlossberg’ from Alsace; Peter Veyder-Malberg’s Grüner Veltliner, Wösendorfer Hochrain from Austria; and Domaine Roulot Meursault 1er Cru 'Clos Des Boucheres monopole’ from France. The opening beverage menu also showcases some of Japan’s most remarkable, premium sake and sake blends including Kamoshibito Kuheiji Junmai Daiginjo “Hi no Kishi, Tanaka 1789 x Chartier Blend 001 and Nishide “100 Year.” A light selection of beers and soft beverages are also available.

INTIMATE AND WELCOMING

Paying homage to classic Tokyo-style sushi restaurants, Sushi Note Omakase is unassumingly tucked away beneath the Rodeo Collection. The concept’s design draws inspiration from Japan’s native plants and organic materials, and it is reminiscent of a traditional Japanese omakase bar. The bar top was handcrafted with imported wood from Japanese Hinoki trees, a type of cypress that only grows in central Japan. Cherry blossom accents and dimly lit brass light fixtures add a modern-yet-timeless touch to the space, while wood-slotted wall panels lined with family photos from Paxson, Gibbs, Saito San, and Aguilar are hung around the restaurant’s perimeter.
