We're leaning on the oven for dinner this week as a reminder to all of us that quick weeknight dinners don't have to be cooked on the stovetop. The oven can tackle all the cooking, or finish a meal that starts on the stovetop. Either way, you get hands-off cooking, no need to stand and stir.

Quinoa Bowl With Tahini Dressing
Everyone will love the combination of textures in this balanced fall dinner salad: chewy quinoa, tender roasted broccoli and red onion, creamy avocado, and crunchy cucumber and almonds. It's a healthy dinner that satisfies.
Picadillo-Style Chili
It doesn't get much faster or beefier (in a sophisticated way) than this. Our 30-minute beef chili is inspired by picadillo, a traditional Cuban dish. It's light on tomatoes but big on flavor from cumin, cinnamon, and poblanos, as well as manzanilla olives, toasted almonds, and currants that make deliciously different toppings.
Shells with Roasted Cauliflower, Chickpeas, and Ricotta
You need a curvy pasta like small shells or orecchiette to hold the chickpeas, ricotta, and cauliflower in this tasty dish. The cauliflower and chickpeas are roasted in the oven and develop deliciously caramelized flavors. Though this dish takes a little over 30 minutes to come together, it's mostly hands-off time.
Curried Chicken with Coconut Rice
Do you love chicken and rice as much as we do? It's such a versatile dish, and even if you're a die-hard fan, we think this version brings something new to the table. (Hint: It's the coconut rice!) Our one-pan dinner starts on the stovetop, then moves to the oven to cook for 25 minutes. That's our way of saying this meal takes 50 minutes, but for half of that time, you can tackle chores or kick back while dinner finishes cooking.
Baked Fish and Chips
It's fish-and-chips Friday and that's a good thing! Our baked version is so much easier and less messy than deep frying—healthier, too. It's all made on two sheet pans, which means you can sip a glass of wine while the oven does the work.
