Ingredients

    red onion, thinly sliced

  • 1

    watermelon (preferably seedless)

  • 2

    Persian cucumbers, sliced into 1/8" rounds

  • 4 oz.

    crumbled feta

  • 1

    small bunch fresh mint, thinly sliced or torn

  • Kosher or flaky sea salt

  • Crushed red pepper flakes (optional)

  • Extra-virgin olive oil, for drizzling

Directions

  1. In a small heatproof bowl, cover onion with hot water. Let sit 5 minutes.

  2. Meanwhile, cut a slice of watermelon crosswise from the center, about a 1 1/2"-thick round; reserve remaining watermelon for snacking. Arrange on a baking sheet. Layer cucumber slices on top of watermelon. Sprinkle with feta and mint.

  3. Drain onion and pat dry with paper towels. Layer onion on top of cucumber; season with a pinch of salt and a pinch of red pepper flakes (if using). Drizzle with oil.

  4. Slice into wedges to serve.
